Mushroom Care and Storage Methods

Mushrooms are extremely sensitive to moisture. To maintain freshness and ensure optimal condition for use, please strictly follow the procedures below.
◆ Basic Handling Upon Arrival
- Open the box and lid immediately.
If left sealed, the heat generated by the mushrooms’ respiration can increase humidity and temperature, leading to spoilage. - Remove any moisture pads or ice packs included in the shipment.
These are intended to maintain humidity during transport; leaving them sealed maycause excess moisture inside. - Allow air to circulate around the mushrooms for a short time to remove any trapped moisture.
This is especially important if the mushrooms were boxed for an extended period, as it helps prevent decay and discoloration.
◆ Storage Guidelines
- If the included paper sheets are damp, replace them immediately with dry sheets.
Wet paper in direct contact with mushrooms can cause spoilage. - After replacing the paper, loosely wrap the mushrooms to prevent direct exposure to air while maintaining appropriate humidity.
For moisture-sensitive varieties, such as Saketsubatake, a gentle paper wrap helps retain ideal humidity. - Check mushrooms once daily, and replace paper as needed.
- White mold-like mycelium may appear at the base of Saketsubatake mushrooms. This is normal and not a quality issue; gently wipe or brush it off.
- Phallus indusiatus (Kinugasatake bamboo mushrooms) should be stored in the refrigerator with the lid open.
◆ Recommended Storage Conditions
- Keep mushrooms refrigerated at 0–4°C (32–39°F) with stable humidity.
• The vegetable compartment of the fridge or a well-ventilated refrigerated space is ideal.
